Baked Beans With A Bite
I wouldn't dare give you an entree idea for Presidents' Day Weekend without an appropriate side, now would I?! These semi-spicy baked beans are quite tasty with the white cheddar meat loaf minis. I served them to a client last night, and she sent a text with these exact words about her boyfriend's enjoyment, "David is eating meatloaf and beans like he has never seen food before. Delish!"
Now THAT makes my day!

Baked Beans With A Bite
Serves 6-8
4 slices turkey bacon, finely chopped
1 small sweet onion, chopped
1/4 cup packed organic dark brown sugar
2 tablespoons dijon mustard
2 teaspoons chipotle chile, canned in adobo sauce, finely chopped
3 (16 ounce) cans navy beans, rinsed and drained
12 ounces (3/4 of 18 oz bottle) of Bull's Eye Original barbecue sauce
Cooking Spray
Preheat oven to 350 degrees.
Cook bacon in a large skillet over medium high heat, flipping once until both sides are crisp. Remove bacon from pan and set on plate layered with paper towels. Dab dry.
Pour out excess drippings from pan, leaving about one tablespoon. Add onion and saute for 3 minutes.
Combine bacon, onion and remaining ingredients (brown sugar through barbecue sauce) together in large bowl; toss well. Spray an 8x8 pan or baking dish with cooking spray. Spoon in bean mixture.
Bake for 30-35 minutes.
