Daniel and I are in South Florida celebrating the anniversary of our reuniting 3 years ago in Miami (where he was living at this time). His best friend, Coley and his gorgeous wife, Melissa, were there with us that Valentine's weekend 3 years ago, and we're staying with them and their adorable 15 month old son, Caleb, at their house this weekend!

We wanted to kick off our Valentine's Vacation with a great meal together last night, and I must say, this is a heart melter!
Recipe for love...
Spinach, Blue Cheese and Peppered-Turkey Bacon stuffed Buffalo (or Beef) Filets
Serves 4 (Reduce ingredients by half for 2 people)
Ingredients:
5 strips of peppered-turkey bacon
6 cups chopped fresh organic spinach
4 minced garlic cloves
1/4 cup beef stock
1 cup (1 package) blue cheese crumbles
4 Grass-Fed Buffalo (or Beef) Filets (whatever grass-fed filet your butcher has available)
1 tablespoon olive oil
Salt & Pepper
Preparation:
Saute bacon in a large skillet until browned on both sides, 5 minutes.
Add just a tablespoon olive oil to pan. Add garlic and spinach. Stir to coat with oil and bacon drippings.
Add broth to the pan, mix well, and cook until almost evaporated.
Remove from heat, put into small bowl and let cool slightly. Combine in blue cheese crumbles, salt and pepper.
Chop bacon and add to spinach mixture in bowl.
Sprinkle salt and pepper on both sides of filets.
Preheat oven to 350 degrees.
Wipe down skillet. Turn heat to medium-high. Add filets to skillet and sear on all sides until golden brown. The insides will be very rare, but you will finish in the oven. Set filets aside on plate to rest and slightly cool for a few minutes.
With cooled filets, cut an X into the top, going about half way through filets.
To stuff the filets, take about 2-3 tablespoons of the filling into the pocket. Gently press down and add 1 to 2 more tablespoons filling on top of filets.
Place filets on a coated sheet pan. For medium-rare, roast for 20 minutes, for medium-well about 35 minutes.
Rest a few minutes before serving and enjoy!
Delicious with a green vegetable and sweet potato or cauliflower mash!
End with a chocolate dessert, and watch your sweetheart swoon!
