Mini, Cheesy Meat Loaves!

Meat loaf has taken on a whole new look and attitude!


Presidents' Day Weekend is here! Many offices and schools are closed come Monday, which means an extra day of weekend celebrations for you, your family and friends!

Several great American classic dishes have marched through our minds this week in anticipation of getting together with loved ones. There's nothing like a great spread of comfort food favorites to bring home the essence of a long, American holiday weekend. We plan on celebrating our great Nation's Presidents with a few meals that make it quite nice to be an American!

These small cheesy meat loaves aren't what grandma used to serve, but if she would have known about preparing them this way, I bet she would have!

Mini meat loaves are simple, delicious and fun. Not to mention, the cook time (also known as your husband/boyfriend/kid's waiting period during his/her massive hunger rant) is cut in half!

Serve these to anyone!

White Cheddar Mini Meat Loaves

Serves 4-6 (2-3 mini loaves each)

1/2 cup bread crumbs
Cooking Spray
1 medium chopped onion
4 garlic cloves, chopped
3/4 cup ketchup, divided
3 ounces sharp white cheddar cheese, diced & 1 ounce shredded
1/4 cup chopped fresh organic parsley
2 tablespoons fresh grated parmesan
1 tablespoon prepared horseradish
1 tablespoon dijon mustard
1 tablespoon dried oregano
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
1 1/2 pounds lean ground sirloin (or ground turkey)
1 large, free-range, organic egg, lightly beaten

Preheat oven to 375 degrees.

Heat skillet over medium-high heat. Add breadcrumbs; cook for 3 minutes or until toasted, stirring frequently.

Meanwhile, heat another large skillet over medium-high heat. Coat pan with cooking spray. Saute onion and garlic for 3 minutes. Combine onion mixture, breadcrumbs, 1/4 cup ketchup, and remaining ingredients in a large bowl. Mix well.

Spray 12 muffin cups with cooking spray. Spoon meat mixture evenly into cups, making a round top.

Spread 1 teaspoon ketchup over each.

Cook for 30 minutes. While baking, shred additional white cheddar cheese for topping.

Top each with a pinch of shredded cheese. Cook additional 5 minutes or until melted.

Let cool for 10 minutes.
